Apple Nut Crunch

Cook time: 30 minutes @ 350°F
Yields: 6

Additional information:
This is an old recipe that I got from a friend who worked at the Cornell law library. If you are in a European mood, this will suit you.

Ingredients

  • 1/2 cup white flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup (or less) brown sugar
  • 1 tsp vanilla extract
  • 1 cup chopped walnuts
  • 1 cup tart apples, peeled and cut into cubes
  • whipped cream or vanilla ice cream for topping

Directions

  1. 1. Mix flour, baking powder, and salt.

  2. 2. Cream eggs and brown sugar together until light.

  3. 3. Gradually blend the flour mixture in, then stir in vanilla, nuts, and apples.

  4. 4. Bake in a greased 10" casserole or pie pan and bake for 30 minutes at 350°F.

  5. 5. Serve warm or at room temperature with whipped cream or vanilla ice cream (frozen yogurt) on top.
