I was told once that eating "Mediterranean Style" could add fifteen years to your lifespan. I don't know if that could really be measured accurately and I think it's a load of baloney. But, this meatloaf is delicious enough to try it.
Pre-heat oven to 400* F.
Soften tomatoes in a bowl of warm water and coarsley chop. Set aside.
In a small skillet, cook spinach and onion over low heat for 4-5 minutes. Remove from heat, cool and add feta (or cheddar) cheese.
In a large bowl, combine turkey, oats, garlic powder, oregano, milk and tomatoes. Mix until well blended with hands.
Shape two-thirds of the turkey mixture into a bowl shape and set aside. Flatten remaining third into an oval shape on a sheetpan and spoon spinach mixture onto center. Flip bowl-shaped turkey mixture on top of this and shape into loaf, pinching at edges to seal.
Cook 30-45 minutes in oven.
