Southwestern Style Succotash That Doesn't Suck

Additional information:
Erin got it from her mom but we've changed it a little.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained and rinsed
  • 1 bell pepper, chopped
  • 1 red onion, chopped
  • 1 bunch green onions, chopped
  • Apple cider vinegar, to taste
  • Salt and pepper, to taste
  • Olive oil (optional)

Directions

  1. Drain and rinse black beans and corn.

  2. Chop onions and bell pepper and put in a bowl with the beans and corn.

  3. Add remaining ingredients to taste.

  4. Stir, cover and refrigerate.

  5. Serve with tortilla chips as a dip or alone as a side dish.

  6. Best served cold.
