Mom's recipe
Parboil potatoes and carrots and set aside.
Fry garlic and ginger in olive oil.
Add potatoes and carrots and cook briefly.
Add onion and cook mixture until browned.
Add curry powder and spices, stir to coat.
Once warmed thru, add tomato and coconut milk.
Optional: add frozen peas at the end. If you add them frozen, the hot curry will defrost them to a perfect, non-mushy temperature.
Serve over basmati rice that has been cooked with a few cloves and cumin seeds.
