Quick biscuits

Before you begin

Prep time: Ten minutes
Cook time: 15-20 minutes @ 415 F
Yields: I make about 12 large ones, bu it just depends on how big you like your biscuits

Additional information:
This is a recipe my mom got out of a whole foods for the whole family cookbook and I've used it as my no-fail biscuit for years. It's good under chicken and gravy or as a side for dinner... pretty much any way you would want to enjoy a flaky, buttery cloud of yumminess :)

Ingredients

  • 4 C flour (you can use all purpose or whole wheat, it's delicious either way)
  • 1 tsp salt
  • 4 tsp baking powder
  • 8 ounces shredded cheese (I use a bag of Mexican blend)
  • 1 cup butter, cold, cut into tablespoon chunks
  • 2/3 C buttermilk
  • 2/3 C milk (more if the dough is dry)

Directions

  1. Preheat oven to 415

  2. Stir together dry ingredients

  3. Pinch the cold butter into the dry ingredients with your fingers until it looks crumbly

  4. Add milk and buttermilk and stir to make a dough

  5. Turn out onto the counter and knead with your hands JUST until it comes together (do not over work the dough)

  6. Pat out to about 1 inch thick

  7. Cut into squares the size that you desire

  8. Place on a cookie sheet and bake until puffed and golden, about 15-20 minutes

  9. Enjoy!
