Zucchini Bread

Before you begin

Prep time: 20 minutes
Cook time: 1 hour at 325°F
Yields: Makes 2 loaves, 8 healthy slices per loaf

Additional information:
I got this recipe from a friend many years ago and have been perfecting it ever since.

Ingredients

  • 3 eggs
  • 2 cups brown sugar OR 1 cup honey
  • 3/4 cup oil
  • 1/2 cup water
  • 1/4-1/2 cup plain or vanilla yogurt
  • 1 Tbsp vanilla extract
  • 1 tsp salt (optional)
  • 4 cups flour (I use whole wheat)
  • 1-1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2-1 cup chopped walnuts
  • 1 handful of sunflower seeds
  • 2 cups grated zucchini

Directions

  1. 1. Mix everything together in no particular order until everything is moist. Don't overbeat.

  2. 2. Pour into 2 greased loaf pans (8 x 4" makes taller loaves; 9 x 5" makes shorter ones).

  3. 3. Bake about one hour at 325°F. Loaves are done when a toothpick comes out clean.

  4. 4. Cool in pans for 15 minutes, then remove from pans.
