This recipe is from my mom, who got it from a friend of hers. I altered the recipe a bit and made it for my girlfriend for her birthday, since she's the biggest granola fan I know.
Preheat oven to 350°F.
Mix oatmeal, oil, honey, seeds, wheat germ, cinnamon, and nuts (if not already roasted) in a large roasting pan (or two). The mixture should be spread out so that it is no more than 1 inch thick.
Bake for 30 minutes or until golden, stirring well every 5 minutes.
Mix in the coconut after baking for about 15 minutes. If you haven't added the nuts yet, you can mix them in now too.
After you take the mixture out of the oven, mix in the dried fruit.
Stir several times while it is cooling.
Let it cool completely, then store in an airtight container. It will last for several weeks.
