I call it NOODLE soup, because I like to add a lot of noodles. You can add as little or as much as you'd like!
Cook chicken in about 1 inch of water with salt and pepper until white all the way through. Take out and cut into cubes. Set aside.
Meanwhile, in a large pot sautee chopped onion, celery, and garlic in oil until vegetables are soft.
Add chicken broth and bring to a boil.
Add chopped carrots and elbow noodles.
Cook until noodles are almost done, then add cubed chicken and spices to taste.
