Prep time: 15-20 minutes
Cook time: 16-20 minutes @ 350 degrees
Yields: 22-26 cupcakes
Mix in a bowl with a spoon all the ingredients from the 2 cups of flour through the 1/2 tsp.ginger.
Set aside.
Beat the first 6 ingredients until smooth.
Gradually add the bowl of dry ingredients until it is well mixed.
At this time,if you choose, add the mini chocolate chips.
Fill cupcakes 2/3 to 3/4 full.
Bake until toothpick comes out clean.

This recipe has way, way too much sugar. I used 1.5 cups total, eliminating the powdered sugar altogether, and the cupcakes were completely delicious.
