Rhubarb Cobbler

Before you begin

Cook time: 35 minutes @ 350°F

We joined a CSA (community supported agriculture) and got lots of rhubarb in our first share. I had never baked anything with rhubarb before but I was very impressed with the result.

Ingredients

  • 2 cups rhubarb, chopped
  • 1 cup flour
  • 1 cup sugar
  • 1 tsp baking powder
  • pinch of salt
  • 1 egg
  • 3 Tbsp milk
  • 1/3 cup butter, melted
  • 1/2 tsp cinnamon

Directions

  1. Cut rhubarb in small pieces. Spread the pieces on the bottom of a 9x9 baking pan.

  2. In a bowl, combine flour, sugar, baking powder, salt, egg, and milk. Mix until crumbly.

  3. Spread mixture evenly over rhubarb pieces.

  4. Drizzle melted butter over top. Sprinkle with cinnamon.

  5. Bake at 350°F for 35 minutes, or until top starts to get a little golden brown.
