We joined a CSA (community supported agriculture) and got lots of rhubarb in our first share. I had never baked anything with rhubarb before but I was very impressed with the result.
Cut rhubarb in small pieces. Spread the pieces on the bottom of a 9x9 baking pan.
In a bowl, combine flour, sugar, baking powder, salt, egg, and milk. Mix until crumbly.
Spread mixture evenly over rhubarb pieces.
Drizzle melted butter over top. Sprinkle with cinnamon.
Bake at 350°F for 35 minutes, or until top starts to get a little golden brown.
