Yields: 9-12 servings
Heat oven to 375*. Generously grease a 13x9 inch pan with butter.
Pile the sliced apples in the pan. Sprinkle the sugar and lemon juice over them and stir gently, right in the pan. Once the slices are evenly coated, spread them uniformly.
Combine the flour, oats, sugar, brown sugar, cinnamon, and salt in a large mixing bowl. Toss the ingredients with your hands to mix them.
Add the butter pieces to the dry ingredients and use your fingers to rub in the butter until you have pea-size crumbs. At this point, none of the flour should be noticeable. Mix in the pecans or walnuts, if desired.
Spread the topping evenly over the apples and press it down gently with your palm.
Bake the crisp on the center rack for 45-50 minutes, until juice bubbles around the edges and the topping is golden brown.
Transfer the crisp to a wire rack and cool for at least 15 minutes before serving.
