Honey Cornmeal Muffins

Before you begin

Prep time: 30 minutes
Cook time: 13 minutes @ 375 F
Yields: 12 muffins

Additional information:
This is what I whip up every time I have to make something for a potluck, class, etc.

Ingredients

  • 1 3/4 cups white flour
  • 3/4 cup cornmeal
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk (Plain soy milk works too!)
  • 1/2 cup honey
  • 1/4 cup oil
  • 1 egg, slightly beaten

Directions

  1. Grease 12 muffin cups.

  2. In large bowl, combine dry ingredients (flour, cornmeal, baking powder, salt).

  3. Add wet ingredients and stir just until dry ingredients are moistened.

  4. Fill muffin cups 2/3 full.

  5. Bake at 375 F for 13 minutes, or until VERY LIGHT brown. (The bottoms burn easily, so don''t wait too long!)

  6. Remove from pan immediately.

    These are like a sweeter version of cornbread. Yum!
