Prep time: 30 minutes
Cook time: 13 minutes @ 375 F
Yields: 12 muffins

This is what I whip up every time I have to make something for a potluck, class, etc.
Grease 12 muffin cups.
In large bowl, combine dry ingredients (flour, cornmeal, baking powder, salt).
Add wet ingredients and stir just until dry ingredients are moistened.
Fill muffin cups 2/3 full.
Bake at 375 F for 13 minutes, or until VERY LIGHT brown. (The bottoms burn easily, so don''t wait too long!)
Remove from pan immediately.
