Yields: 4-6 servings
Wisk flour, baking powder and salt in a LARGE bowl to blend.
Wisk milk and egg yolks in a medium sized bowl to blend. Add to dry mixture, blending until smooth.
Add butter and blend.
Beat egg whites in a medium sized metal bowl until soft peaks form. Add sugar slowly, beating until stiff.
Fold egg whites into batter in two additions.
Heat non-stick griddle/pan over medium heat. Brush with melted butter.
For each pancake, fill 1/4 cup measuring cup full of batter and drop unto griddle.
Pancakes are done when golden on both sides.
